Bondi Organic Republic has prime position on a corner just a barefoot hop from the beach. Born out of a belief that food is a vital force in any community, it’s perfectly primed to catch the salt-skinned locals who spill in and out of the doors, or perch in the window.

The motto is ‘let the bread speak’ offering a challenge to the immortal words, ‘let them eat cake’. Here, there is no disconnect or obliviousness, but conscious choices in every element and ingredient – but above all it’s a hub for the collective community.

Bread is baked throughout the day, with bakers visibly kneading and pressing at the table behind the counter. Consider it an opportunity to nab a fresh-from-the-oven loaf of quinoa and amaranth while still fitting in a sleep-in. There’s certainly no restraint in the variety of offerings; you can expect organic loaves, pizzas, sandwiches, scones, bagels, muffins, slices and an extensive collection of cakes poised for eating.

All that variety aids the Republic’s ability to catch all those beachgoers as they emerge from the sea. Despite the hurdles of staying organic, sustainable and local, it seems that if you can bake it you can still find it here. There is a smorgasbord of gluten-free options for those who have cause to lament a lack of variety. Salvador Coffee takes the reins on the roasting and makes for a punchy addition to a spelt scone or a focaccia studded with tomatoes or olives.
