For the unitiated, Bill Granger is the legendary Australian chef who popularised avocado on toast, a dish that’s synonymous with Australian cafe culture around the world. It all started at the original bills in Darlinghurst, but this location and the third in Surry Hills are equally good spots to get acquainted with the Granger’s breezy style.

Skip to the “classics” section on the breakfast menu to find two dishes now served at most cafes in Sydney: ricotta hotcakes and sweet corn fritters. As with the avo toast, Granger is largely responsible for their continuing popularity. Other choices include muesli and various toast dishes.

The lunch and dinner menus expand the remit to include vibrant salads, burgers and seafood, often with a subtle Asian influence. Thankfully, you don’t have to wait until then to have a cheeky Bloody Mary or white peach Bellini – they’re available from the early morning, along with a custom espresso blend from Single O and house-made lemonade.
