Wildflower's owner, brewer and Texan native Topher Boehm (ex Flat Rock Brew Cafe and Batch Brewing) plans to deal exclusively with wild ales at Wildflower. He spent time training in Belgium and France, the ancestral home of yeast-driven styles such as saison and lambic. Now he's busy harvesting wild yeasts (i.e. yeasts not produced in a laboratory, like commercial beers use) from around New South Wales and using extensive barrel-ageing and blending techniques.
Wildflower's initial range of three core beers includes a golden ale, an amber ale and a table beer.
