Sauce Brewing Co was brewing beer long before opening its brewery and taproom doors in Marrickville. Husband-and-wife team Mike Clarke and Kate McBean gypsy brewed – making beer on other brewers’ equipment and using mobile canners to get it into kegs and cans.

With a space of their own, they can nurture a thirst for experimentation. Small batches have yielded intriguing brews like the Saucy Molé, a porter-based beer infused with chipotle and cacao to imitate the Mexican molé sauce. The Bubble and Squeak takes leftover hops and puts them into a New England style IPA. The result is a fruity beer that has the scent of tropical fruit juice.

Clarke loves a good hoppy beer, which is clear from the three regular brews Sauce has on tap: Hop Sauce, Extra Hop Sauce and Mega Hop Sauce.

Sauce is across the road from the Marrickville outpost of Bourke Street Bakery and is only marked by a Sauce Brewing Co sign that hangs above the entrance to the carpark. The brewery and taproom are side by side in the vast brick warehouse so revellers can enjoy their beers and admire the mirror shine of the tall tanks.

Out back is a grassy, sunny beer garden. Food trucks frequent the carpark, offering hearty, greasy fare such as burgers and sausages.
