Set in what was previously a garage in a laneway off Kent Street, Papa Gede's is an intimate cocktail bar run by hospo power couple Michael Dhinse and Lara Dignam, who have channelled New Orleans and a dash of voodoo with their saloon.
Look for the flickering candlelight from the street and head in through the old cobblestone laneway. At the bar, find local craft beers and a snappy wine list. But Papa Gede's is primarily a cocktail bar, and that's where you should be spending your time.
Try the Hipster G&T with house tonic, or the Zombie (mixing three rums, citrus and apricot brandy). Otherwise, the Divine Intervention will cure pretty much any affliction – there’s absinthe, lemon and passionfruit. If you don't have to go to work tomorrow, ask for the absinthe list. The bar stocks French, Swiss and American varieties.
