Taking its name from the taxidermy business that used to reside on the site, Palmer & Co is a prohibition-style bar that transports you, first underground and then to a different time, harking back to yesteryear at every tune, from the food to the drinks; décor and even glassware.
At this modern-day speakeasy, the focus is squarely on cocktails and spirits. Expect upwards of 30 gins, more than 80 whiskies and 40 tequilas listed on the tome-like drinks menu. Staff have been recruited from bars all over the globe and they know their game, so it’s worth chatting with them for some advice on what to order.
Champagne is the second bigbgest focus after cocktails and spirits, with around 30 to choose from. Australian and international wines are also available to sip to the sound of a jazz band from Wednesday to Sunday nights.
In fitting with the bar’s theme, a snacky, European-influenced menu is served till late. Think steak tartare, three-cheese jaffles and cured meat boards.
