Chefs Rod Parbery (The Ledbury) and Wayne Jenkins (Merivale) are teaming up with businessman Nicholas Siafakas to launch Mr Watkins.
The bar's name comes from Captain Watkins Tench, who was part of the First Fleet and explored the Penrith area, and the venue will look like how the owners imagine the inside of Watkins' study looks like.
