The Hayberry is another small bar tapping into the colonial-themed trend popular in Sydney’s North Shore. Small-bar pioneer Chris Lane, the brains behind the successful Small Bar venues in Sydney’s CBD, Crow’s Nest and Kirribilli, is behind this pumping late-night gem, which he co-owns with Steve Jones and Mike Broome.

The interior is moody and inviting, a mish-mash of exposed brickwork, elevated leather booths, gothic-style iron lighting and framed artworks featuring some of the mainstays in Aussie history, including Ned Kelly. Out back you’ll find the outhouse and a courtyard covered with greenery and rickety wooden tables and chairs. Craft beer is on tap. The bar food includes Southern fried chicken fries; a Bogan burger of beetroot, egg, bacon, cheese, barbeque sauce, pineapple and mayo; and an assortment of tacos and quesadillas.

You’ll also find the hard-to-come-by cinnamon Fireball liquor as well as potent cocktails such as New Balls Please (Chambord, Pimms, strawberry puree, lemon juice and mint) and American Pie (Zubrowka vodka, cherry bitters and cinnamon sugar). The cherry on top? The staff is upbeat, friendly and there for a good time, like you.
