Morgan McGlone was chefing at fine-dining restaurants in Nashville, Tennessee when he became addicted to the local fried chicken. He has opened Belles Hot Chicken outlets in Melbourne and past pop-ups in Sydney at Harpoon Harry, Icebergs and Barangaroo’s Wulugul Walk.

This fast, casual, 115-seat eatery on the waterfront is the first permanent Sydney location for Belles. It serves chicken waffles on weekends; chicken ribs in a peach-barbeque sauce; hot clams from Cloudy Bay; and sandwiches, including its famous Zinger-inspired spicy fried chicken sambo. The latter is a halal-certified, skin-on thigh fillet with shredded lettuce, onion and special sauce on a spongy, lightly toasted milk bun. The chicken packs an intense, dry crunch.

The drinks list is dominated by craft beers and natural wines by local producers, some with a zero sulfur and preservative count.
