As far as mission statements go, New Normal’s Instagram bio certainly is ambitious, but this spirited wine bar and kitchen is walking the walk.

Taking up residence in a former furniture warehouse in Subiaco, New Normal is very much in step with the zeitgeist. Distressed brick and minimal, Scandinavian-style furniture dot the room. Bar seating surrounds the open kitchen complete with wood-burning oven.

Every aspect of the operation has been designed to soften its carbon footprint, starting with a strong focus on West Australian producers. Ingredients are sourced from throughout the south west, treated with a light touch in the kitchen, and cast as heroes of carefully composed dishes such as a spring-time arrangement of squash, broadbeans and house-made ricotta. Elsewhere, fat tendrils of Fremantle octopus get played off against sweet roasted pieces of fennel.

The drinks list is equally parochial and has a strong bent towards the lo-fi, boutique and “natural”. Dishes and wine choices are scrawled in chalkboard while owners are constantly making strides towards eco-friendliness (they’ll even share their discoveries on the decidedly dinner party unsuitable topic of organic waste management).

A rooftop bar boasts views of the surrounding area and serves charcuterie and bar snacks.
