Ronnies serves the kind of pizza you’d find on the US east coast: sturdy enough to hold in one hand, chewy with a crisp base, and cut big enough to fold. The slices are ideal to eat as you walk just a few sandy-footed minutes to Scarborough Beach.
The casual venue is a joint venture between the Hoodburger team and long-time collaborator Chris Fabbro, who started quietly building a following for his pizza pop-ups in 2017.
The dough ferments for up to 72 hours, developing flavour and gluten strength. Pizzas are fired in a three-deck Moretti Forni oven, achieving that all-important crisp without overcooking the toppings.
Standouts include a Chicago-style sweet sausage item; a vodka sauce slice with mellow tomato flavour and silky texture; and a mortadella and caramelised pineapple number.
The American influence continues with the subs. Served on crusty, toasted rolls from Stuzzico, they’re saucy, cheese-pull-heavy sandwiches you’ll want to eat with both hands. The favourite is the meatball sub, made using Fabbro’s family recipe and topped with melted provolone and marinara.
The space is simple and breezy. There’s a bench or two outside, but Ronnies was designed for a perfect takeaway.
