Every Thursday to Saturday night, a noisy crowd loiters by The Mantle’s table-tennis table. They’re not there for ping-pong. They’re queuing at the Short Order Burger Co counter.
Owner Simon Kony has eaten more burgers than most. Every Sunday for a period of two years, the Melbourne local would take a group of mates, hunt down the best available and rate them.
Over the years, his knowledge of what makes a great burger expanded, as did his desire to make his own. Kony came to WA for love and opened Short Order in 2015, just three months after touching down.
Where competitors experiment with ingredients, Kony draws inspiration from American diners and their “short order” cooks, opting for simplicity. With just six burgers on the menu, the focus is on the quality of the ingredients and the precision of the cooking.
Patties are thick and cooked medium rare by default, ensuring maximum juiciness. The BBQ Bacon Cheeseburger features maple bacon and an excellent smoky sauce. Chilli fiends will go for the Fiery SOB. Vegetarians will appreciate the SOB Mushroom, which substitutes a hefty Portobello for beef.
Sides are also kept simple – fries and sauce. Serves are generous and sauces varied, with ketchup, mustard and barbecue sauce available as well as three types of aioli: regular, Sriracha and jalapeno. The drinks list is soft drinks only, but BYO is allowed.
