Nobu
Crown Perth’s installation of the global Nobu chain presents signature Japanese dishes with Peruvian influences.
Head chef Leif Huru (ex-Nobu Bahamas) developed some locally inspired dishes just for Perth, including Huru’s favourite ingredient, West Australian marron, cooked in a wood oven and served with shichimi (seven flavour) butter. Another stand out is the Wagyu in leek ash, with buckwheat porcini risotto and truffle hollandaise.
The restaurant is one of the few Nobu venues to include a teppanyaki option (in two semi-private spaces). There’s also a long sushi bar. It’s a finely tuned outfit, with prompt service and a wide selection of cold and hot dishes made from first-rate ingredients. These include renowned signature creations such as the yellowtail jalapeno sashimi with coriander and the deeply flavoursome black cod miso.
The wine list favours big-name varieties from Australia (there’s an entire section devoted to Penfold’s Grange) and around the world (Château Mouton Rothschild et al.). Otherwise get into the Japanese/Peruvian swing with the extensive sake collection, a Pisco Sour or a Lychee Martini.
By day, tables by the window have a view over the pool below, and by night the best view in the house just might be the sushi bar, where you can sit with a glass of bubbles and witness some serious knife skills.
