Coffee purists love Humblebee’s micro-roasting approach. Each bag of take-home beans is roasted while you wait, ensuring maximum freshness. This committed approach is echoed in every aspect of the cafe, which is all about honouring the bean.
Those with a taste for personalised orders might find this ethos confronting: skinny and soy isn’t offered due to their affect on taste. Likewise, full-cream coffees only come in two sizes – those Humblebee believes create the ideal coffee-to-milk ratio.
The house blend, Coogee Street, is named after the street Humblebee is located on. It’s designed specifically for espresso and presents notes of bittersweet dark chocolate, stone fruit and toasted nuts. Then there’s a range of single origins and specialty filter coffee for a cleaner, lighter body which best highlights the nuances of the bean.
True aficionados have the opportunity to immerse themselves with free public cuppings. At these events it becomes clear how seriously owner and head roaster Zach Huynh takes his coffee, if the milk policy didn’t already make it clear.
As polarising as this philosophy seems, though, it’s worth stomaching just to nab a chocolate croissant or one of the cafe’s famous filled doughnuts.
