Mati and Kaitlyn Kuld – pronounced “cooled” – bucked Perth’s gelato trend when they opened their hand-crafted ice-creamery in the laneway next to Blacksmith on Beaufort Street. The gamble paid off and a year later the pair took over the shell of an abandoned cafe to open their second outlet in Fremantle in late 2017.
While tea-based varieties of the North American-style ice-cream proved popular with Highgate’s after-dinner drop-ins, the Fremantle store caters for heavier daytime traffic and different tastes.
The Freo menu includes ice-cream sandwiches – using house-made cookies, of course – thanks to a North American baker on staff. The flavours change weekly, with the Kulds making ice-cream at the start of the week, before splitting their time between the two stores.
