Masterchef fans will recognise Wade Drummond from the 2012 series. But the self-taught Perth chef is more comfortable behind the scenes, running Leake St Cafeteria, discreetly tucked behind Kakulas Sisters.   Wade’s mantra is, “Take the hippie out of health food”. At Leake St Cafeteria, he serves salads and sandwiches stuffed with fresh and pickled vegetables, but health benefits are only ever a side effect of the primary goal: to taste incredible.   His treats are raw because of the absence of an oven in the teeny kitchen. The ever-changing menu of salads and sandwiches is dependent on the produce, whether brought in by the crate-load from a friend’s hobby farm in Pemberton, or hand-picked from the Subi Farmers’ Markets.

There’s also excellent coffee – including cold-drip, so elusive in Perth – from Melbourne roasters Allpress; tea from Chai Baba in Fremantle; and juice from the Victoria Park-based Re:fresh.

The spot functions as a base for Wade’s initiative, Cooking for A Generation. It teaches kids in impoverished areas the basics of nutrition and cooking skills. Crowd-sourced through Kickstarter, the cafe reached its funding goal in just over two weeks – likely aided by the cult-like following Wade (AKA Mr Drummond) has amassed for his famous crumpets, sold at local farmers’ markets.
