In a city peppered with great cocktail bars, finding a winner is easy. But when you flick through a long cocktail list, indecision can set in. We’ve taken the guesswork out of it – here’s what’s good, and where.

Bobeche

Bobeche is a cocktail lover’s playground in the heart of the CBD. With a speakeasy-style fit-out and drinks served in fancy teapots, Bobeche is one fun bar that offers free entertainment all night. Said entertainment: the people behind the bar.

The bartenders here create some of the quirkiest drinks in Perth. Bar manager James Gentile’s suggestion: Bobeche Iced Tea. A twist on a classic punch – this drink is served in a teacup and versions of it feature Tanqueray gin, Ketel One Vodka, Pampero Blanco Rum, Cherry Heering, lemon and lemonade.

Long Chim

The team at Long Chim cooks some of Australia’s best Thai food, so it makes sense they’d pair it with an artfully curated cocktail menu using Thai flavours.

Long Chim’s beverage director James Connolly’s pick is the MIG 21.“Johnnie Walker Double Black (extra smoky), Drambuie, absinthe, orange bitters and salt are added to a small oak barrel for four weeks while they get to know each other a little better,” says Connolly. “We then decant and serve it stirred down over a crystal-clear ice block, with a dehydrated lemon wheel."

Mechanics Institute Bar

Mechanics Institute on William Street has become somewhat of a cocktail institution. Known for their cheeky behind-bar antics, Mechanics’ cocktail wizards have become a Perth favourite for their Epic Bloody Mary – a mix of vodka, tomato, Worcestershire sauce, tabasco and pepper, finished off with a cheeseburger cocktail topper.

Rockpool

No less than 15 signature cocktails feature on Rockpool’s generous menu, including classics such as gin and tonic and Bond’s favourite, the Martini. Then there’s the not-so-classic but equally impressive tipples, the New Fashioned, the Butter Pecan Sazerac and our pick: the decadent Canadian in New York.

Made with Bulleit Rye Whiskey and maple-bacon shrub, with accents of Aztec chocolate and Regan’s Orange Bitters, this cocktail is served Manhattan style, with a sliver of bitter chocolate bark to top it off.

Wildflower

It might be a relatively new addition to Perth, but Wildflower on Cathedral Avenue has already become a top night-time meeting spot. Want a taste of WA? You literally can at this rooftop bar where the menu reflects the six seasons of the Indigenous Noongar calendar. Think delicious dishes and cocktails made using in-season, locally sourced ingredients.

One of Wildflower’s most popular signature cocktails, says head bartender Patrick Schoutenten, is the Freo Doctor. “Made with gin, absinthe and eucalyptus, shaken with fresh lemon juice, it’s the perfect accompaniment to Wildflower’s six-seasons concept,” says Patrick. “It is dry and light – the ultimate pre-dinner drink to get the appetite going.”
