After calling time on his eponymous Restaurant Maurizio at the WA Italian Club earlier this year, veteran chef and restaurateur Maurizio Di Ciano has resurfaced on Beaufort Street with No Menu.

Taking over the former Ace Pizza, Highgate Drink & Dine and Rockefeller site, No Menu sees Di Ciano swap the tablecloths and fine-dining stylings of his previous restaurant for something more approachable and fluid.

“We’ll be raiding the local markets every day and each day we’ll put on special dishes,” he says. “We’re creating fine-dining-quality food but serving it in a casual way.”

The wood-fired oven inherited from previous tenants will be used to bake each day’s changing selection of savoury and sweet pizzas. Stuffed roasted capsicum will be typical of the vegetable offering. The pasta, naturally, will be handmade, ranging from beef and spinach gnocchi to spaghetti chitarra served with cacio e pepe, Rome’s famously pungent one-two of black pepper and Pecorino Romano cheese.

At the heart of the restaurant is its “no menu” offering; a chef’s menu that starts at $50 per person and includes a series of dishes to be shared family-style.

In the afternoons, aperitivo hour will be offered between 4.30pm and 6.30pm and see guests receive free finger-food with every drink purchased.

The Saturday and Sunday brunch menu will feature “pretty Italian food”, including Eggs in Purgatory (essentially an Italian shakshuka); fried eggs; and fresh Italian sausage on toast, plus zabaglione, a dessert made by whisking egg yolks, sugar and marsala wine that Di Ciano describes as “the Italian Red Bull”.

No Menu plans to launch Saturday and Sunday morning markets in the back area, featuring Italian street food and coffee.
