Blackbox Brewers is going old school. Come the start of August, the cosy Subiaco cafe from the owners of Sprolo, Little Matcha Girl and Blacklist Coffee Roasters will swap its cool, Scandi lines for a more retro-leaning aesthetic reminiscent of a neighbourhood milk bar. While the commitment to excellent coffee will remain, the team will be introducing a menu starring Perth’s item du jour, the toasted sandwich.
“We feel there’s a good market for that,” says cafe co-owner Darren Woon, of the rebrand to The Toastery. “Subi’s really grab and go, people don’t want to hang around too long. Toasted sandwiches fit that bill. They’re affordable and something you can do every day.”
Woon and his partners are keeping the opening menu concise with a tightly clipped selection consisting of both basic (thick cheese and ham, and vegemite and cheese) and gourmet sandwiches made with luxe ingredients and high-end cheese. A pork floss and Kewpie mayo number stays true to Blackbox's love of Asian flavours. Perhaps in a nod to milk bar and American diner culture, baristas will also be moving to a darker, fuller-bodied roast once The Toastery opens.
Impressively, the cafe will remain open during the makeover. It sounds ambitious, but considering Blackbox’s owners pulled off a similar speedy makeover last year for the cafe’s opening, the three-week turnaround should be a (relative) walk in the park.
“I guess we like pain,” laughs Woon.
The Toastery opens on Monday August 7.
