In the atrium of Perth’s regal State Buildings, Petition has lived a long and storied history. The latest chapter of the story began in September 2024 when Jess Roe joined the team as head chef of Petition and the adjoining Beer Corner and Wine Merchant.
Before Petition, Roe spent six years at Crown Perth where she rose through the ranks from apprentice to sous chef, then became acting chef de cuisine at Bistro Guillaume and represented Australia in the youth team of the Culinary World Cup.
Roe told Broadsheet her favourite spot for a caffeine hit, the ice-cream spot where she always gets more than one scoop, the dirty fries she picks up for a late-night bite, and more.

What is your favourite dish to cook at Petition and why?
It’s hard to choose a favourite since I love all the dishes. On aesthetics, the amberjack ceviche and the baked brie for Wine Merchant stand out. They look stunning on the pass, and it’s always rewarding to see the guests’ delight when they receive them.

Is there a hidden gem that you think is great?
Laika in Lathlain. It’s a wonderful venue with great coffee. It’s the perfect spot to start your day, especially sitting in their outdoor garden. I also love Wise winery in Eagle Bay. It’s a must-visit for incredible views and amazing food. If wine isn’t your thing, their cold-pressed strawberry pink gin is an absolute standout.

If you’re after something sweet, where are you heading and what are you getting?
If I’m in Fremantle, Swan River Gelato is a must. I can never stop at just one scoop; their flavours always hit the spot. Otherwise, a cookie from Get Chunky is a guaranteed win.

Where’s the ideal spot for a date? Why?
It depends on the week! For a relaxed evening, watching the sunset at the South Perth market [Streats] on the foreshore is perfect. If you’re feeling adventurous, start at hidden bars like Darling Darling, then try linedancing at Honky Tonk in Fremantle. When you work long hours and mostly night shifts, the choice between a chill night or enjoying the nightlife is always a tough call.

What’s your go-to if you want a quick takeaway dinner?
Anything from the Beer Corner menu is a favourite. Japanese or Thai food is always a great choice, too.

What’s your favourite snack in Perth?
Fried chicken at Lucky Chan’s or anything from the menu at Edward & Ida’s is always a winner.

Where can you find the best coffee?
There are so many great coffee spots in the city! Ol’ Buoy in Cottesloe (the view helps), Laika, Angelo Street Market, and Atomic Espresso are always at the top of my list.

Do you have a go-to for a long lunch? What are you ordering?
If I have the luxury of a long lunch, it’s usually because I’m away somewhere. Beerfarm down south is a favourite. Their menu changes often, but if you’re lucky to visit on one of their smoked meat days, it’s a real treat.

What’s your favourite spot for a late-night feed?
Jaffles at Foxtrot Unicorn and dirty fries at Alabama Song are my go-to options for a late-night bite.

Tell us about a local producer you can’t stop thinking about?
Franklin & Clement in the Perth Hills is a standout. Em puts so much care and love into her products. We’ve featured her chilli jam on our breakfast menu, and it’s been a hit with guests.
