The backpackers are out and the icy copper taps have returned to the restored Globe Hotel, a 133-year-old building near the corner of Wellington and William streets.

Tucked in the interior courtyard of the 140 William complex, the Globe Bar and Eatery – to give it its new name – is a three-part gastropub. Intimate booths define the laneway bar while the traditional pub area is refreshed with a vertical garden. Luxe leather banquets and large windows give the eatery an upscale feel. In short, it’s a set-up designed to give end-users options galore.

“There’s something for everyone,” says chef Alexandra Haynes. “You can go out and have a really nice night with lots of food and not be hit with a whopping bill at the end.”

The Globe’s opening share-plate menu draws from Haynes’ recent trip to Turkey. Tempered with fried haloumi, harissa-coated grilled watermelon is sweet and spicy. Melting eggplant and chilled tomatoes are dressed with aromatic rosewater yoghurt. Crisp-skinned chicken confit is contrasted against sautéed silverbeet with sultanas and hazelnuts.

There’s similar thought applied to the casual options, from the tempura-fried fish with sriracha aioli served in the pub to bar snacks in the vein of chunky pork belly sausages with pineapple sambal.

Comprising 24 tap beers and a well-rounded selection of Australian and international wines, the drinks list is a step up from what the site’s previous gap-year travellers might have enjoyed.

As she did during her tenure at Cottesloe’s beachside cantina Il Lido, Haynes plans to change the menu regularly. “I like to look at every dish and see something in there that’s in season," she says.
