Tasmanian-born brewery Fox Friday opened its first Perth brewpub in April, hot on the heels of a March announcement that caused considerable stir among WA craft beer fans.

The semi-industrial space in Burswood is the brewery’s third location, joining the original venue in Hobart and a Melbourne outpost that opened earlier this year. Moving into WA seemed inevitable for Fox Friday, with co-owners Benn and Sarah Hooper both hailing from Perth.

“Fox Friday’s roots in WA go a long way back, and Perth has really embraced our taproom with open arms. We’ve brought a little bit of Richmond and Hobart to Burswood, and although the Perth taproom has a bigger capacity, we’ve tried to bring the intimacy of our other taprooms here,” national brand manager Ricky Watt tells Broadsheet.

“We’re excited to join the awesome beer industry out west … We hope we can be accepted into the scene and continue the longstanding tradition of top-quality beer coming out of WA.”

While the space is new for Fox Friday, the building has brewing in its DNA, with previous occupant Blasta Brewing Co relocating a few doors down last year. Fox Friday has updated the space with its signature minimalist design and dark colourways, accented by pale timber furnishings and earthy red brick.

Robert Murphy (ex-Bistro Guillaume) leads the kitchen with a menu that leans into the venue’s brewpub persona. Burgers are are well-represented, along with small plates like lobster rolls, Nashville hot chicken and corn ribs, and a grill section with generous cuts of dry-aged beef. A modest list of wines from WA, Tasmania and Victoria, plus cocktails built around local spirits, rounds out the naturally beer-centric drinks offering.

The venue opened in April and brewhouse installation is still underway. In the meantime, Fox Friday is brewing its WA-exclusive beers at it's Tasmanian and Victorian facilities.

“We’ve brewed eight beers exclusively for WA so far, with plenty more in the works. WA has a healthy appetite for hop-forward beers, so we have released a mix of styles. Plus we have keg-only taproom exclusives pouring across our 20 taps.”

And for beer fanatics, Fox Friday is set to become one of the few venues across the state with Lukr side-pull taps from the Czech Republic, which will allow the team to slow-pour pilsner – an exacting technique that results in dense, creamy foam and a softer mouthfeel.
