Coming Soon: Two Swish New Sorrento Venues From the Gibney Team

What do Perth’s northern suburbs, the Basque region and Ancient Rome have in common? For now, not much. But that will all change in April 2027 when the Kailis Group opens Surreo and Bar Surreo.
The two venues will make up the bulk of George Kailis’s new Sorrento development, which is set to be WA’s largest beachfront restaurant precinct.
Surreo will be an elevated seaside steakhouse. No head chef has been appointed yet – although, according to a statement, Gibney’s James Cole Bowen will be “leading the creative culinary direction”. The Kailis team says the menu will be inspired by Ancient Roman culinary traditions and the steakhouses of the Basque region, while staying true to the sensibilities of Perth’s northern suburbs.
“The concept leans more toward a grillhouse than a traditional steakhouse, reflecting a menu that balances premium meats with a strong emphasis on seafood and vegetables. While Basque and Roman traditions have informed the culinary direction, the intent is to create a broader seaside offering, featuring seafood, house-made pasta and produce-driven dishes, with steak as the hero,” said Kailis in a statement.
Alongside Surreo will be Bar Surreo, a seaside bar. The two venues will be complementary but distinct, each with its own head chef and menu.
Rezen Studio, which was shortlisted for an Australian Interior Design award for Gibney, has been tapped to design both spaces.
Construction is currently underway. Surreo is set to have a large terrace which will take advantage of the ocean views. At the centre of the terrace, you’ll find a wishing well, complete with a custom four-metre-tall marble statue. Guests will be given a Surreo coin on arrival to make their wish. You can also expect a dry-aging room clad in stained glass, a dedicated champagne lounge for 30 guests, a 4000-bottle-strong walk-in cellar and three handcrafted selenite crystal chandeliers.
Bar Surreo will be an intimate grotto with textured walls and ceilings and a mother-of-pearl bar.
Both Surreo and Bar Surreo are set to open in Sorrento in April 2027.
