After being held up for almost a year due to licensing problems, Sam Winfield can finally begin the final preparations for his new William Street natural wine bar and wine store, Wines of While.
Due to open in April, the 50-person venue will be, to quote the venue’s Instagram: “a natural wine store and bar, serving authentic wines and honest food”.
“It’s going to be a place where people can head into on the way back home out of the city and have a plate of pasta or a few small plates to have with their wine: that kind of vibe,” says Winfield. “It’s going to be quite simple in what it offers, but be very welcoming and intimate.”
To drink: expect a selection of 200 wines with around a dozen available by the glass. In the traditions of intimate Australian and European wine bars such as London’s P Franco and Sydney’s defunct 121BC, the food offering will be simple, satisfying and designed to play nicely with wine: good sardines in a tin, say, and meats sliced to order. Winfield is also a keen sourdough baker and is looking forward to sharing his loaves with others.
Patrons will be able to enjoy wine and food al fresco on William Street (the space’s westerly orientation lending itself to sunset drinks).
For Winfield – an assistant surgeon by day and training – the project will be an opportunity to share his passion for wines made in an organic, hands-off style. As well as being able to sell wines that are usually only available via mail order from eastern states retailers, Winfiled also wants to dispel some confusion surrounding the natural wine discussion.
“I want to use this place to help clear the muddied waters about natural wine being this label slapped on anything that’s cloudy, unfiltered or has a few chunks in it,” says Winfield. “I want the discussion to be more about the grower and how it’s grown. Through travelling, I’ve seen so much interest in natural wine and don’t it’s a fad or a trend. I’d like to show people how good it is and give Perth greater access to it.”
