Blacklist Coffee Roasters reopened its Subiaco cafe Blackbox Brewers as The Toastery just under two years ago and offered toasted sandwiches and takeaway food. Struggling with a lack of foot traffic in the area, the Blacklist team is preparing for the cafe’s third iteration and hoping a focus solely on coffee will bring customers from outside of the area.
“We’ve got some crazy plans, we think it will be good for Subi,” says Blacklist co-owner Darren Woon. “It will be something quite different. The way we serve coffee will be different. We’ll unveil how we’re going to do that later.”
The concept is still being finalised and the name under-wraps for now. Food service is being considered, although retail will be a key part of the offering.
“It’s not just a cafe: it’s an experience centre, a concept store,” says Woon. “We’re going to refit it, something really clean and minimal. There will be high-end retail items that you can’t find easily. We’re importing from all over the world.”
The new venue will have an emphasis on filter, although you’ll still be welcome if a flat white is more your thing.
“We will have a very serious brew bar,” says Woon. “We’re bringing in some high-end green coffees for it, super-expensive stuff in tiny lots just for filter. Of course, we will have a coffee machine offering every blend we have. It’s like a cellar door. Walk in, see what we’ve got, point out what you want and we’ll make it your way.”
The Toastery’s last day of trading will be Friday May 24. The new venue is expected to open in June.
