Bac Pham’s name is constantly mentioned among the best young chefs in WA. After cooking at Rockpool and Petition, Pham opened North 54, his first venue, last year. In February, he added a dinner service. Basically, it’s been a big year for Pham.

Although he’s spent a lot of the year churning out banh mi, pad krapow clams and stracciatella ca tim kho nam xo, he still finds time to get out and about.

Your favourite dish at North 54

“My favourite banh mi would be the son-in-law egg roll. It’s super underrated but so delicious. It hits the spot every time. On the dinner menu, my go-to dish is the com tam with the grilled pork neck. It’s one of the most-ordered dishes, other than the bun bo hue. It’s just super tasty.”

The best thing you’ve eaten in WA this year (so far)

“The Skull Island prawns with sesame sambal at Jacob D’Vauz and Anisha Halik’s pop-up Magnolia BBQ. I can’t wait till they reopen!”

Uncle Lam’s in Coventry Village. It’s fast, efficient and filling.”

China Bar in Northbridge. It really hits the spot. It’s my go-to for a post-service feed with my wife.”
