After purchasing property in Tasmania’s north-west in 2003, Willie Simpson and Catherine Stark set up the Seven Sheds brewery, meadery and hop garden in 2008. Simpson knew the Tasmanian climate, fertile soil and abundance of water to be ideal for growing hops, so he established his own hop garden with Leggett and Fuggle varieties, featured in most of the brews, and planted right out the front of the brewery.
Simpson is an award-winning home brewer who focuses on small-batch brewing. His approach combines traditional brewing techniques along with experimentation. Ingredients such as quinoa, oatmeal, ginseng, honey, berries, stonefruit and Peruvian cacao beans create distinct flavours in his regular line-up of beers by the glass and bottle.
Park out the front of the sheds overlooking the hops vines and order a tasting paddle. Sip on five brews and pick your favourite. On a sunny day the Razzamatazz offers a refreshing “fruit tingle in a glass”; and the wheat ale is infused with clover honey and berries. During the chilly winter months swig the Willie Warmer, a strong dark ale brewed with chocolate malt and spiced with star anise and cassia bark.
