The $350 million, 264-room boutique hotel is gearing up to welcome guests from May 18. Here’s what we can expect from the new ultra-cool accommodation.

Ace Hotel Sydney is the first property in the southern hemisphere from the US boutique hotel group, which first announced its expansion to Australia in 2019. Reservations have been open since the company announced its Surry Hills location, and now we have a confirmed opening date: Wednesday May 18.

Architect company Flack Studio has fitted out the rooms and the 18-storey hotel will be home to a lobby-level restaurant called Loam, as well as a rooftop restaurant called Kiln headed up by chef Mitch Orr.

Loam is the first food and drink venue to open in the $350 million development, from as soon as Tuesday May 17. Loam means “earth”, and the menu will be focused on getting the most out of our local fresh produce, particularly veggies.

King of good times Mike Bennie, co-owner of drinks retailer P&V, who’s shaped both Sydney’s and Australia’s dynamic drinks scene, is leading the drinks lists at Loam and Kiln. Ace also appointed interior designer Fiona Lynch to deck out Kiln. She’s used local materials and recruited Aussie artisans to create a space we’re told will have muted earth tones and a look reminiscent of ’70s Australia.

In addition to Loam and Kiln, there’ll be a bar and cafe in the communal lobby and a photo booth for capturing memories of your visit.

It’s being developed in partnership with Golden Age Group, which acquired the location in 2017.

Rooms start from $359 (high season).
