A new stay in Mirboo North, a township in the picturesque surrounds of East Gippsland, is all about the sweet side of life: it’s set on a working honey farm. Originally built in 1996 as an artist’s studio, The Apiary retains its original hand-hewn character while incorporating contemporary comforts – inside, you’ll find pitched ceilings, a bathroom clad in handmade tiles and a loft reading nook. The grounds around the one-bedroom mudbrick house feature ancient oaks, Japanese-influenced gardens and, naturally, a clutch of bee boxes. It’s a short drive to Lamezleighs Coffee House and Eatery, where coffee comes courtesy of St Ali and the drinks list highlights the best wine and beer the region has to offer.

Uninterrupted farmland and river views, a woodfired sauna and a sky free from light pollution are just a few of the attractions on offer at Swan River Sanctuary on Tasmania’s east coast. Both cool-climate wineries and several oyster farms are in easy reach, the lodge also serving as a gateway to explore the striking landscapes of Wineglass Bay and Freycinet National Park. The off-grid accommodation, which sleeps up to six people, is offering a cool $500 off a two-night stay with the code WINTER RITUALS until September 15, 2026.

The Lancemore Group has made a winter escape to its regional Victorian properties a little more enticing with a complimentary third night when you book a two-night stay. Where you go is up to you: pick from the peninsula charms of Lindenderry Red Hill, King Valley’s Lancemore Milawa or Cleveland Estate Macedon Ranges in the heart of Victoria’s wine country. Closer to Melbourne, Mansion Hotel Werribee Park offers that regional feeling without the extended road trip. The package includes daily breakfast, mulled wine and s’mores to enjoy in the evening, and late checkout.

If a city break is more your speed, the Doma Group has got you covered with 30 per cent off stays of two nights or more across its properties in Canberra, Sydney, Adelaide and Newcastle. A smart pick is one of the Little National hotels, which offer rooms small in square footage but big on good design – including expansive, cloud-like beds set against floor-to-ceiling windows. The Leea, located in Darwin’s CBD, is entering a new era as it relaunches in August with the Prendiville Group – whose credits include restaurants such as Tigerfish and accom like Samphire Rottnest – as operators. Design agency Collectivus has been tapped to bring a breezy, contemporary aesthetic to the hotel’s interiors and shared spaces. A refreshed, resort-style pool, swathes of tropical greenery and a locally led food offering round out the transformation.
