It could be because it’s getting chilly and we’re drawn to drinks with warming whisky and lemon. Perhaps it’s the fact that this cocktail has a puzzling, medicinal name that makes you want to find out more. Or it could just be that it tastes bloody good.
Whatever the reason, the Penicillin – an Everleigh specialty – is having a moment right now. “It’s probably the most popular one on our delivery menu,” says Michael Madrusan, who co-founded the popular Melbourne bar (as well as Heartbreaker and Bar Margaux).
