Jesse McTavish, head chef and co-owner of Dunes in Palm Beach, has a considered approach to work-life balance. He reckons paddling out in the ocean on his surfboard at least four times a week helps to “puts things into perspective” away from the hustle and bustle of his popular restaurant.

In this video, we follow McTavish from the beach to the kitchen. While “the adventure thing” is huge factor in the chef squeezing in surfs before work, it also provides inspiration in trying to translate the sensory experience of the ocean to the plate.
