Sydney butter purveyor Pepe Saya has dropped some killer collaborations over the last little while, including brekkie crumpet packs with Crumpets by Merna and an umami-packed butter with Oomite. Now, it’s joined forces with Canberra-based Three Mills Bakery to roll out a cookie dough made with Pepe Saya butter.
“[Three Mills Bakery] make all their croissants, pies and baked goods with Pepe Saya,” Pepe Saya’s Georgia Somerville tells Broadsheet. “The Pepe Saya team went on a trip to Canberra to visit our mates at Three Mills late last year, and we were sent home with a box of goodies to bake at home that were all made with Pepe Saya butter. From there we worked on finding the perfect way to showcase our butter and their bakers for people at home.”
The result? A soft and chewy bake-at-home log of cookie dough with a lush butterscotch-miso centre. Along with Pepe Saya’s cultured butter, they’re made with house-milled rye flour. And the cookies are super simple to bake: cut off around six to eight pieces of dough from the log, slide them into the oven for nine minutes, pipe on butterscotch, then back into the oven for a few more minutes.
The butter baron has also brought back those hugely popular breakfast boxes – this time around they come with passionfruit or lemon curd, a sixpack of crumpets from Crumpets by Merna, butter and crème fraîche. And if you’re turning your hand to baking during Sydney’s lockdown, it’s also launched a baker’s pack, which includes buttermilk, ghee, salted and unsalted butter, crème fraîche and lemon curd.
