Recipe: Pimms and Lemonade Icy Poles

Sharing a strawberry-filled jug of Pimms and lemonade is a civilised way to spend an afternoon with friends. Doing the same with an icy-pole version might be a touch less refined, but it’s just as delicious.

Makes six icy poles
10 minutes preparation
4 hours of freezing

Ingredients
70ml Pimms
280ml lemonade
3 strawberries, finely sliced

Method
Arrange the slices of strawberry in the icy pole mould. Combine the Pimms and lemonade in a jug and pour carefully into the mould until it’s about 95 per cent full (the liquid will expand slightly as it freezes).

Insert sticks. If using wooden sticks, stretch a single piece of cling wrap over the top of the mould. Poke the sticks through the cling wrap to keep them in place.

Freeze for at least four hours, then remove and enjoy. If the icy poles are difficult to remove, submerge the mould in warm water for 10 seconds to loosen them.

Note: you can switch out the strawberries for whichever berries are in season, or grab a bag of frozen fruit from the supermarket.
