Recipe: Gin and Tonic Icy Poles

A warm day calls for a cool gin and tonic. This frozen version takes the summer vibes to the next level and is a perfect ice-breaker at your next backyard barbeque. Switch up the gin and the garnish to however you like to drink your G&Ts, but make sure you use a good quality tonic water, as you’ll need to use more of it than usual to ensure the blocks freeze.

Makes six icy poles
10 minutes preparation time
4 hours freezing time

Ingredients
70ml gin
280ml good quality tonic water
Cucumber, finely sliced (or another garnish of your choice, such as lemon, lime or orange)

Method
Arrange the sliced cucumber in the icy pole mould. Combine the remaining ingredients in a jug and pour carefully into the mould until 95 per cent full (the liquid will expand slightly as it freezes).

Insert sticks. If using wooden sticks, stretch a single piece of cling wrap over the top of the mould. Poke the sticks through the cling wrap to keep them in place.

Freeze for at least four hours, then remove and enjoy. If the icy poles are difficult to remove, submerge the mould in warm water for 10 seconds to loosen them.
