There’s a fruity finish to this ’80s English classic, adapted by one of Australia’s best bars.

The man who invented the Bramble, Dick Bradsell, also invented the Espresso Martini, so you know it’s got staying power.

Bradsell came up with the Bramble in 1984 in London, while working at Soho club Fred’s. The fresh and fruity cocktail is now a mainstay on British bar menus. Here, Bulletin Place offers up a raspberry version.

Raspberry Bramble
Serves 1

Ingredients
Ice
4 fresh raspberries, plus extra to serve
45ml gin
20ml freshly squeezed
Lemon juice
20ml sugar syrup (1 part caster sugar; 1 part hot water)
1 slice fresh lime to serve

Method

Pound some ice in a tea towel.

Press the raspberries gently into a tall glass. Pour in the rest of the ingredients and fill the glass with the crushed ice.

Stir through gently, garnish with lime and some extra raspberries and serve.
