As much as Melbourne Food and Wine Festival is about attracting Australia and the rest of the world’s best culinary talent to Victoria, it’s also an opportunity to celebrate our local scene. And what better examples are there of dining and drinking in Melbourne than South Yarra bistro France-Soir and sandwich heavyweight Hector’s Deli? This year, the French icon and the lunchtime favourite are collaborating with Broadsheet on a limited event for the festival.

For two evenings over the festival, Hector’s Deli in Fitzroy will transform into a night-time bistro, offering steak and omelette sandwiches with a paired glass of wine.

Dom Wilton, chef and owner behind Hector’s Deli, believes both establishments have the shared ethos of “perfecting simplicity”.

“My mum first showed me France-Soir when I was young,” Wilton tells Broadsheet. “She brought me down in-between services, on a really hot day, and in the dark end in the back of the restaurant, we shared a creme brulee and my mind was blown.

“France-Soir is a very special place to me, and that’s why this collaboration is maybe the height of my career.”

On the menu there’s a sirloin steak sandwich with cornichon relish, semi-spicy horseradish sauce, and a blanket of melted provolone cheese, served with a side of France Soir’s top-secret pepper sauce. Vegetarians can enjoy an egg omelette with goat’s cheese and a caper, parsley and dill salad, topped with France Soir’s renowned bearnaise sauce. Both options will be served on the deli’s house-baked sesame baguette and will be accompanied by a pile of shoestring fries. For vino, there’s a glass of beaujolais village by Laurence and Remi Dufraitre.

How do you make the perfect steak sandwich? In a very special collaboration, we asked two Melbourne legends - Sanga star Dom Wilton from Hectors Deli and famed French chef Geraud Fabre of city icon France-Soir to join forces to create the perfect steak sandwich.

There’ll be two seatings each night to ensure everyone gets a chance to try these early contenders for best sandwich team-up of the year.

Due to popular demand for this event, Hector’s Deli x France-Soir x Broadsheet have added two extra nights to the line up, Tuesday 19 and Wednesday 20 March. Tickets are on sale Wednesday 7 February from 3:30pm, until sold out. Tickets cost $44, with seatings at 5:30pm, 7pm and 8:30pm.
