Throngs of eager diners pile through the doors at 300 Smith Street, Collingwood, as chef Ryan Dolan swiftly plates up the dishes he’s been finessing in preparation for the opening of what is already a fast-paced kitchen. Tonight, he’s in command.

But the Kitchen is still swarming with painters, builders and panicked staff, with only 10 hours until opening.
