Griddle me this: which country has the best steak restaurants in the world?

According to the annual World’s 101 Best Steak Restaurants ranking, it’s bloody Australia mate.

The full list of global grills was revealed on Thursday night, after a staggered rollout on Instagram during the week. Not surprisingly, a whopping 17 Australian restaurants made the cut. And this year, it was all about Sydney.

Neil Perry topped the Australian entries again, with his Double Bay diner Margaret coming second overall. The trailblazing chef’s former restaurant, Rockpool Bar & Grill (now owned by Hunter St Hospitality), slipped to number 12 after coming eighth last year.

Meanwhile, The Point’s executive chef Joel Bickford must be stoked – two of the Sydney hospitality group’s restaurants debuted this year, with The Grill at The International in Martin Place landing high at 14 and sibling Shell House at 51.

Also new to the list was Paul Faraag’s Middle Eastern masterpiece Aalia at 36, The Cut Bar & Grill at 62 and Corey Costelloe’s Marrickville diner 20 Chapel at 93.

Rounding out the Sydney contingent was Lennox Hastie’s Firedoor at 16, Porteño at 20, The Gidley at 32 and its sibling Bistecca at 99.

Down in Melbourne, lavish dine-in butcher Victor Churchill came in at 18, Wagyu specialists Steer Dining Room at 37, Andrew McConnell’s Gimlet at 45, subterranean steakhouse Meat Maiden at 91, Scott Pickett’s Matilda at 57 and Chris Lucas’s Grill Americano at 92.

Same as last year, first place went to Don Julio Parrilla in Buenos Aires’s Palermo district. The luxe Argentinean steakhouse – led by owner-sommelier Pablo Rivero and “meat master” Guido Tassi – is known for its 60,000-bottle wine cellar and specialty cuts of regeneratively farmed Aberdeen Angus and Hereford beef, dry-aged for 21 days.

The World’s 101 Best Steak Restaurants ranking is now in its sixth year, with restaurants visited by “steak ambassadors” on every continent. Judging criteria includes meat quality, meat selection, service, wine lists, reservation process and the look and feel of the venue.
