Can’t get an Attica booking? This might be the next-best thing: a range of limited-edition kombuchas in nostalgic childhood flavours from chef-owner Ben Shewry.

Ben Shewry is the first to admit he wasn’t exactly a kombucha fan. Attica ’s chef-restaurateur had only ever tried it once before he was approached about a collaboration by Melbourne drinks brand Remedy Drinks.

Fast forward a few months and the Attica x Remedy Kombucha collab is officially live, with two nostalgic limited-edition flavours: Lime Spider and Apple and Rhubarb Crumble.

“I wanted to do something that was fun and summer, and that was attractive to both adults and children,” says Shewry. “We wanted to make things that connected to childhood and to good times, happy memories – and I wanted to try to put them into a drink.”

To kick off the new collaboration, Attica and Remedy joined forces for an exclusive dinner on Monday February 5. Guests were treated to a six-course degustation, designed by Shewry, with each course paired with a Remedy kombucha flavour – and no alcohol in sight.

“We sat with all of [the Remedy drinks] around the table and tasted and thought of what would be best to serve with them,” says Shewry. “And that’s not an uncommon practice for us. Attica is one of the first restaurants in Australia to do a non-alcoholic pairing.”

Pairings included Attica’s signature spice-crusted lamb shoulder with a pomegranate kombucha, and Remedy’s Apple Crisp kombucha matched with the 3K tart (featuring 3000 pieces of finely diced vegetables).

Of course, the new flavours were featured on the menu, too. The first course, which featured mud crab and pickled desert lime, was paired with the Lime Spider kombucha. To end the night, guests were treated to an apple rhubarb crumble (which Shewry was perfecting right up to when it was served) alongside the Apple and Rhubarb Crumble kombucha.

Both flavours are now available to purchase – but only for a limited time. As for the future of Attica and Remedy collaborations, Shewry says the door remains open. “I’d definitely want to do it again … It’s been so nice to collaborate with another fantastic Melbourne brand,” he says.
