Midnight Pasta at Fico
"All the food courts close at 11.30pm," he says. "It's generally very hard to find anything good to eat at that time."
For the good of hungry festival-goers, De Maria is reviving That's Amore for three nights. The short-lived, incredibly fun food and wine pop-up is a collaboration between De Maria and chef Pasi Petänen, which they've run once in Sydney and once in Melbourne.
This time they'll be working at and with Fico, one of Hobart's best Italian restaurants. The official title is Midnight Pasta: That's Amore x Fico. "We're going to take out most of the tables," De Maria says. "It's mostly going to be standing up – a nice vibe, nice music."
De Maria is bringing a full complement of organic, low-intervention Italian wines – about 60 all up. He'll be pouring them with his trademark brio and generosity. In the kitchen, Petänen and Fico chef Federica Andrisani will be sending out two different snacks and four different pastas each night, some traditional, some more innovative. The event isn't ticketed – you can just roll in and buy as little or as much as you like.
The main thing, though, is that you don't have to go to bed if you don't want to. The crew has a 5am license and plans to stay open for as long as there are willing customers.
"There are quite a lot of people that want to party later," De Maria says. "You just end up going to the pub, which is great. But we wanted to make a place to go late at night – especially for chefs and hospitality people – to relax, have a chat, a drink and some good food."
