One of Sydney's best pastry and dessert creators has collaborated with the gelateria on a cookie pie that combines banana split with peanut butter, pretzels and fudge sauce.

Messina has committed to a daring new creation week after week, and now it's calling in reinforcements.

Its latest bake-at-home cookie pie is a collaboration with Andy Bowdy, widely regarded as one of Sydney's best when it comes to cakes, pastries and desserts (his Christmas trifles are the stuff of holiday dreams). Before opening up Saga, he ran an online cake service and baked out of a production space at Messina, so the partnership goes way back.

This time they're taking inspiration from one of his old creations: a peanut butter banana split, now in cookie pie form. That means a bake-at-home peanut butter and banana custard cookie pie with frozen peanut crumble, a litre of peanut butter and pretzel cluster gelato, a jar of dark chocolate fudge sauce and six maraschino cherries to top it all off. Once you're home, you just have to toss the pie in the oven for half an hour and top with a scoop or two plus garnishes.

The cookie pie serves four to six people. Orders open on Monday August 30 at different times depending on your closest store location. Pick up is available between September 3 and 5.
