The multi-layered gluten-free chocolate cake is one of the cult patisserie's most ambitious yet. It's inspired by a desert sunset and so beautifully constructed you might feel bad smashing it to bits.

Cult Sydney patisserie chain Black Star Pastry, which also opened a permanent outpost in Melbourne in July, is releasing a new, decadent chocolate cake on Friday October 2.

The Chocolate Mirage is inspired by a desert sunset with dark-chocolate-dusted contoured mousse on top that shimmers like sand dunes under a a gold-brushed passionfruit-chocolate orb.

The cake has a chocolate-and-roaste-hazelnut dacquoise base topped with layers of salted-caramel chocolate mixed with puffed cacao rice streusel; flourless chocolate sponge; and chocolate cremeux infused with rooibos.

The mousse and cremeaux are made with Manjari chocolate made with single-origin cacao beans from Madagascar.

The cake will be available in all stores in both cities, with the option of delivery in Melbourne. Single slices start at $10, and custom sizes from four to 40 portions can be pre-ordered online.
