Low in kilojoules and high in antioxidants (not to mention vitamin B12 and
vitamin D), there are plenty of reasons to add more mushrooms to your diet. And
the Australian Mushroom Growers Association is adding one more reason to the list: the chance to win $10,000 cash. All you need do is blend, snap and share.
When we say “blend”, we’re talking about a simple cooking technique that helps
make the most of your mushrooms. Just substitute a portion of minced meat with
finely diced mushrooms and you’ll increase flavour, reduce fat, cut down on meat
consumption and maybe even trick the kids into eating some more healthy dinners. With their delicious
umami flavour, mushrooms are a great ingredient to blend with family-favourite
recipes such as spaghetti bolognaise, burgers and tacos. All you need to do is
substitute at least 25 per cent of the meat for diced mushrooms.
