The Trentham Collective building has been many things. It was originally a bank. It’s since been a toy shop, craft store and doctor’s office.

The building continues to celebrate this multi-functional life. In addition to the 40-seat Collective Cafe, it contains a boutique travel agent and an interior and homewares store called Collect.

Collective’s owner, Rhys Ripper, is a former art director from Melbourne’s fashion industry. He gave busy city life the flick to run the spot with his mother, Joy. She bakes goodies every night, so they’re fresh in the morning. Rhys’s partner Nathan McGuire joins them and is responsible for the interior design.

The interior is tranquil, with a fine balance of Australian country charm and contemporary design. White walls create a clean and minimal feel, while dark floorboards, recycled timbers and navy ceilings warm the environment. The open fireplaces are pretty cosy in winter too.

The kitchen works closely with local producers to stay up-to-date on what’s available. Winter menu highlights include housemade gnocchi with porcini mushrooms; and a candied beetroot salad.
