Sicilian Giorgio Linguanti came to Australia in 2004. After working in several cheese factories, he noticed that few cheeses were being imported from Italy, and fewer still were being made here authentically. Linguanti started to make his own cheeses at night after work, and eventually founded That’s Amore in 2008.

Now, Linguanti employs more than 70 people at his huge, double-storey factory. Size, though, hasn’t changed the way he does things. Soft-cheeses such as fior di latte, burrata, ricotta, and mascarpone are still made by hand with no dodgy ingredients, albeit on a much larger scale. Ditto for more obscure formaggi such as trecce, squacquerone and caciotta.

The company counts several top restaurants as customers, including Coda and Tonka. Thankfully, you don’t have to eat at either of these spots to get a taste of That’s Amore. The on-site cafe and deli is stocked with the full range, and also serves a mean porchetta roll, which sells out every weekday. There’s also a range of cured meats, olive oils and other Italian deli fare on offer. Cheese is available at factory outlet prices. The full range is also available at sister business La Latteria, in Carlton.
