And one of the classic solutions to that problem is to bring things in-house with a central production kitchen. Instead of doing that in a closed-doors warehouse, the Hector’s Deli crew decided to make it the biggest public-facing venue they’ve done yet.
So Hector’s Bakery is more than just the new home of butchery, baking and fermentation for the fast-growing brand – it’s got all the sandwiches and doughnuts you know and love, plus a little bit extra. Like morning buns and laminated pastries, plus a coffee bar serving Starbucks-esque flavoured drinks and soft serve ice-cream.
From the sleek timber to the marble floors, this is the most luxe – and expansive – Hector’s in town. There’s enough seating to encourage you to seriously linger and take your time with your meal. And the view over the open kitchen, watching the chefs laminating, baking and butchering away, is pretty great too.
