Victor Liong, the owner-chef behind the revered Lee Ho Fook (also Sydney’s now-closed Chuuka and now-closed Chinese breakfast cafe Lawyers, Guns and Money) is known for his innovative Chinese dishes and razor-sharp attention to detail. In 2024, he’s set to open Silk Spoon, a more laid-back version of its fine-dining sibling on 500 Bourke Street, Melbourne.
Named after the Silk Road, the new diner will draw on flavours from across the ancient trade route. The day-to-night spot will lure in weekday warriors with brunch staples and casual lunches, and the increasingly early dinner crowd with a light drinks-and-snacks menu after dark. It will sit alongside establishments like Movida Aqui and Rosa’s Canteen.
Silk Spoon is set to open at 500 Bourke Street, Melbourne in 2024.
