No.8 by John Lawson
Crown’s Number 8 has gotten a long overdue makeover with a new menu, new wine selection, a reworked interior, a newfound dedication to sustainable seasonal flavours, and a new chef – John Lawson.
Lawson worked with Gordon Ramsay at The London; and he also worked for Ramsay at Crown’s Maze. Then Maze became Mr Hive. Crown approached him while still at Mr Hive to see if he would relaunch Number 8 Restaurant. Keeping up? He agreed, bringing with him his restaurant manager, Owen Gibbons, and his head chef Daniele Tarasco, and voila, No.8 by John Lawson was born.
The items exclusively grown for Lawson’s produce-centric menu, with its fresh, unfussed flavours, include Barwon lamb, Milawa free range poultry, almond mushrooms, and bread (such as potato rosemary sourdough) from EDS Breads.
The artisan wine list has been reduced in size but the quality remains, featuring vintages from local vignerons and highlighting regional wines and lesser known gems, while the refined and relaxed decor with its nature based theme makes the perfect setting for enjoying Lawson’s sustainably produced contemporary fare.
