Ibla has a menu you actually need to read, as opposed to the samey Italian menus you absently scan for your go-tos. There’s a traditional capretto forno, a tender baked goat, and a Sardinian-style gnochetti with slow-cooked lamb ragu.
You’ll also swiftly be recommended pizzoli, a Sicilian specialty. It’s a baked pizza sandwich. It seems unimpressive on paper, but the way the sauce and fillings soften the pizza inside, while leaving it crisp on the outside, is some kind of black magic.
