The bricks-and-mortar version of food truck Gorilla Grill proudly celebrates its roving roots. Look closely at the perimeter artwork and you’ll notice local truck logos. For owner Jayda Dinh, it’s a way to pay respect to the close-knit food truck community.

Gorilla Grill started in 2014 as a truck serving Asian-inspired tacos and ribs. Now Dinh and team have built on their experience. While the food truck is still out there, the permanent store expands the menu.

The American theme has an Asian twist. How so? Well, the burgers can come with pork belly cooked Korean style. The pork ribs are rubbed and marinated in Asian ingredients; and a side of spicy and gooey Kim-Cheese Fries is hard to say no to. And the chicken ribs known as “Mama D’s” may taste familiar to Footscray food fans – it’s Dinh’s mum’s recipe from the family’s Vietnamese restaurant there, Bun Ta.

There’s further split-personality in the store. Dinh’s sneaker collection is proudly on display in a glass case, and the artwork reps hip-hop icons and New York street scenes. Many of the staff members are family and Mama D regularly stops in to help out.
